Alas, three strikes and I am OUT. While worrying about the fact that I was a couple of tablespoons short on the cocoa for my cake, I completely neglected to add ANY sugar. I think it still tastes good but I like very dark chocolate. And, I am the only one who thinks it tastes good. I KNEW there was something wrong with the batter. Oh well, try again.

The best thing about cake is that if you screw up you could always make an icing which will compensate the missed ingredient. I’ve made the same mistake before and so I used cream cheese, sugar, and vanilla and slathered it on top. The added sugar from the icing made the cake taste good.

Thanks. That is a great idea. It had actually crossed my mind but I just went ahead and made a second cake in case it didn’t work out. I’ll give it a try with what is left.
